Gingerbread pancakes
List of Ingredients
GINGERBREAD PANCAKES
2 1/4 cups flour
1/2 tsp salt
1 tsp cinnamon
1 tsp grated nutmeg
1 tsp ground ginger
1/2 tsp ground cloves
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 TBL instant coffee granules
1 egg
4 TBL butter, melted
1/4 cup packed brown sugar
3/4 cup buttermilk
Recipe
In large mixing bowl, whisk the flour, salt, spices, baking powder, baking soda & coffee granules together. In a small bowl, beat the egg & blend in the butter, brown sugar, buttermilk & 3/4 cup water. Stir into the dry ingredients, mixing only until dampened. Batter will be lumpy. Pour about 1/4 cup batter per pancake onto a preheated nonstick griddle. Bake until covered w/bubbles; turn & brown theother side. Serve with maple syrup or melted honey butter.
