    Spanish Potatoes

    List of Ingredients




    3 T. butter
    3 medium baking potatoes, unpeeled, boiled, and diced
    1 1/4 c. Monterey Jack Cheese grated
    1 1/4 c. cheddar cheese
    1 medium tomato, diced
    1 small onion diced
    3 green onions sliced
    salt and pepper to taste
    1 large avacodo diced
    1/2 c. sour cream
    salsa

    Recipe



    Melt butter in a skillet over medium-high heat. Add diced potatoes and cook until brown and crisp, stirring frequently. Add cheeses and all onions. Cook until cheese melts and season with salt and pepper. Gently mix in avacodo and tomatoes. Remove from heat. Serve with sour cream and salsa, (optional).
