    Recipe Introduction

A little twist on traditional lemon bars.

    List of Ingredients

2 1/3 cups plain flour, divided
    1/4 teaspoon salt
    1/4 teaspoon baking powder
    1 cup unsalted butter, softened
    2 cups sugar, divided
    4 eggs, beaten
    2 tablespoons grated orange zest
1/3 cup fresh orange juice, strained
    Powdered sugar

Sift together 2 cups of the flour, salt, and baking powder. Set aside. Place butter in a mixer bowl and beat on medium speed until creamy. Gradually beat in 1/2 cup of the sugar. Continue beating until light and fluffy. Turn to low speed and gradually mix in the flour until well blended. Cover and chill for 2 hours. Preheat oven to 350°. Press dough into a greased or sprayed 9x13x2 inch baking pan. Bake 20 minutes. While this cooks, combine beaten eggs with the remaining flour and sugar. Beat in orange zest and juice, and continue beating until light and fluffy. Pour over the baked layer and return to oven for 30 minutes longer. Cool in the pan. Place powdered sugar in a sieve and sprinkle over the top. Carefully cut into bars about 1 1/2 inches square. Makes about 36.
