Crab and Mushroom Quiche

List of Ingredients
9-inch deep dish pie crust
4 eggs, well beaten
2 cups half & half
1/3 cup minced onion
1 tsp. salt
1/8 tsp. pepper
6 oz. crab meat
3/4 lb. fresh mushrooms, sliced, sauted in butter
1 cup shredded mozzarella cheese
Chopped parsley
Combine eggs and half & half. Add onion, salt and pepper. Blend until smooth. Set aside. Drain crab on towels until completely dry. Sprinkle crab, sauteed mushrooms and cheese over bottom of pie crust. Pour in egg mixture and top with chopped parsley. Bake at 425 for 15 minutes. Reduce heat to 300 for 30 minutes. Let stand for 15 minutes before serving.
