    Maple Pumkin Coffee Cake

    List of Ingredients




    Pecan Topping
    3/4 cup sugar
    1/2 cup chopped pecans
    2 tsp cinnamon
    1 tsp maple extract

    Cake
    2 1/4 cup flour
    1 cup brown sugar
    1 Tbsp baking powder
    1/2 tsp salt
    1/2 tsp baking soda
    1 cup buttermilk or sour milk
    3/4 cup pumpkin Canned or cooked fresh (mashed)
    1/2 cup veg oil
    3 eggs, beaten
    1 tsp maple extract (I used 2)
    Combine topping ingredients and mix well.
    Combine dry ingredients.
    Combine wet ingredients and mix with dry ingredients until just mixed. Spread half of better in a greased 9x13 pan, sprinkle with half of topping. Repeat the layers. Bake at 350 for 40-45 min or
    until a toothpick inserted in center comes out clean.
    Cool 10 min and serve. Freezes well. Mine cooked in less time.
