    Orange Pineapple coffee cake

    List of Ingredients




    1 (8-1/4 oz) can crushed pineapple
    1 (18.25 oz) pkg. white cake mix
    2 large eggs
    1 tsp cinnamon
    1 (11 oz) can Mandarin oranges
    1-1/2 c powdered sugar

    Preheat oven to 400F. Grease a 10x2"
    tube pan or 2 loaf pans, 9x5x3". I made mine in a tube pan but am going to try a bundt pan next time.

    In a large bowl, combine crushed pineapple (reserving 3 tbsps of liquid for glaze), cake mix, eggs, cinnamon and mandarin oranges (undrained). Stir just until moistened, then beat on high speed for 2 minutes. Pour into prepared
    pan(s).
    Bake for 35-40 minutes, or until the center is set. Cool in the pan (about 1 hour), then turn out and glaze.

    Glaze: In a small bowl, combine powdered sugar and the reserved pineapple juice. Spoon over the cooled coffeecake.
