    Strawberry Coffee Cake

    List of Ingredients




    1 pkg. (8oz) cream cheese (softened)
    1/2 c. butter (softened)
    3/4 c. sugar
    1/4 c. milk
    2 eggs
    1 t. vanilla
    2 c. flour
    1 t. baking powder
    1/2 t. baking soda
    1/4 t. salt
    1 jar (18 oz) strawberry preserves
    1 T. real lemon juice
    1/2 c. chopped pecans
    1/4 c. firmly packed light brn. sugar

    Cream first 2 ingred...Gradually add sugar. Beat until fluffy. Add milk, eggs, vanilla. Beat well. Combine flour, baking powder, soda, salt...Add to creamed mixture. Beat until blended. This will be stiff. Spread 1/2 of batter in a greased and floured 13x9x2 inch baking pan. Combine preserves and lemon juice...Spread over batter in pan. Dot remaining batter in small bits over preserves. Combine pecans and brown sugar..sprinkle over top.

    Bake at 350 degrees approx. 40 minutes or until toothpick comes out clean. This is so good either warm from the oven or even at room temperature. It is the only "coffeecake" that I have ever found that I like and always get rave reviews. ENJOY!
