Carrot Cookies
List of Ingredients
1 1/2 Cups Shortening
1 1/2 Cups Sugar
2 Eggs
2 Cups Cooked, Mashed Fresh Carrots
4 Cups Flour
4 teaspoons Baking Powder
1 teaspoon Salt
ICING
3 Cups Powdered Sugar
Enough Orange Juice to make a thin icing
Cream shortening and sugar together; add egg and beat in. Sift or mix flour, baking powder and salt together; add alternately
with mashed carrots to the creamed mixture. Drop dough from a teaspoon onto a greased cookie sheet. Bake in 350 degree
oven 15 minutes. Cool on racks. Combine icing ingredients and spread on cooled cookies. Recipe
