    Coconut Crisps

    2 cups all purpose flour
    3/4 tsp baking powder
    1/4 tsp salt
    3/4 cup butter or regular margarine, softened
    1 cup sugar
    1 large egg
    1 tsp vanilla extract
    1 1/2 cups shredded sweetened coconut

    Preheat oven to 375 F. Combine flour, baking powder, and salt in a medium bowl.Beat butter and sugar in mixer bowl at medium speed until light and fluffy. Beat in egg and vanilla. With mixer at low speed, beat in dry ingredients just until combined. Stir in coconut. Drop dough by level tablespoonfuls onto ungreased cookie sheets. With bottom of glass dipped in flour, flatten each cookie to 1/4 inch thickness, then press with back of fork to form ridges. Bake 10 to 12 minutes, until edges are golden. Transfer to racks to cool.

    Yield: about 3 dozen
