    Hummingbird Cake

    List of Ingredients




    3 cups all-purpose flour
    1 tsp. baking soda
    1 tsp. salt
    2 cups sugar
    1 tsp. cinnamon
    3 eggs, beaten
    1 cup oil
    1 1/2 tsp. vanilla
    1 (8-oz.) can crushed pineapple w/juice
    1 cup chopped pecans
    2 cups chopped bananas

    Combine first 5 ingredients in large bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, juice, pecans, and bananas. Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350 degrees for 25-30 minutes or until toothpick in center comes out clean. Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks.

    CREAM CHEESE FROSTING

    1 (8-oz.) pkg. cream cheese, softened
    1/2 cup (1 stick) butter or margarine, softened
    1 (16-oz.) pkg. confectioner's powdered sugar
    1 tsp. vanilla

    Combine cream cheese and butter, beating until smooth. Add conf. sugar and vanillla; beat until light and fluffy. Spread frosting between layers and on top and sides of cake; then sprinkle 1/2 cup chopped pecans on
    top.
