    Artichoke and Mushroom Chicken

    1/2 C. bread crumbs
    salt & pepper to taste
    2 skinless, boneless chicken breasts, halved
    2 Tbsp. olive oil
    1 can (14 1/2 oz.) chicken broth
    1 can (10 oz. ) mushrooms, drained
    1 can (14 1/2 oz.) artichokes, quartered
    1/2 C. grated Parmesan

    Mix bread crumbs, salt & pepper, & coat chicken. Saute chicken in oil until brown, turning at least twice, about 10 min. Remove chicken & pour broth into pan. Stir with wooden spoon until browned bits come loose. Place chicken in a 9-by-12-inch casserole dish. Add mushrooms & artichokes. Pour broth over chicken- it will turn into gravy while baking. Bake at 350 degrees for 45 min., uncovered. Five minutes before removing from oven, sprinkle with Parmesan. Serve with pasta. Serves 4.
