Basic Chicken Marsala

I like a more basic marsala. It works for veal or chicken. Pound veal medallions or chicken breasts thin. Lightly dust with flour, salt & pepper. Saute briefly (2 minutes per side for veal; 3 minutes per side for chicken) in 1 tablespoon olive oil and 1 tablespoon butter. Remove to plate and keep warm. Add about 1/4 cup chicken broth and 1/2 cup sweet marsala. Cook until reduced then quickly swirl in 1 tablespoon cold butter. Serve sauce over veal or chicken.
