CHICKEN CURRY IN A HURRY
1 tsp. canola or olive oil
2 cups diced cooked chicken or turkey breast
2-1/2 cups fresh mushrooms, thinly sliced
1/3 cup chopped onion
3 tbsp. all-purpose flour
1 cup water
1 cup finely chopped Granny Smith apple
1 cup low-sodium chicken broth
3/4 cup fat-free milk
1/4 cup snipped fresh parsley
1-1/2 tsp. curry powder
Heat oil in a skillet over medium-high heat. Swirl to coat bottom. Saute chicken, mushrooms, and onion until chicken is warmed and vegetabes are tender, 4 to 5 minutes.
Transfer to a medium saucepan.
Put flour in a small jar with a tight-fitting lid. Add water and shake well to combine. Pour mixture into saucepan. Stir in remaining ingredients. Bring to a boil over medium-high heat, sitrring constantly. Reduce heat and simmer for three minutes, or until apple pieces are tender-crisp. Stir constantly.
Serve over steamed rice.
