    Chicken Marsala

    List of Ingredients




    4 skinless, boneless chicken breast halves
    1/4 cup all-purpose flour for coating
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1/2 teaspoon dried oregano
    4 tablespoons olive oil
    4 tablespoons butter
    1 cup fresh sliced mushrooms
    1/2 cup Marsala wine
    1/4 cup cream sherry




    Recipe





    Pound chicken breasts until flat and thin. Set aside.


    In a shallow dish or bowl mix together the flour, salt, pepper and oregano.


    Put oil and butter/margarine in a large skillet and heat until melted and
    bubbling. Coat/dredge chicken in flour mixture, shake off excess and brown
    in skillet until lightly browned (about 2 minutes). Turn over chicken pieces
    and add mushrooms. Brown until lightly browned (about 2 minutes). Turn
    over chicken pieces again. Add wine and sherry. Cover skillet and simmer all
    together for 10 minutes, turning chicken pieces once.



    Makes 4 servings
