Eggnog
List of Ingredients
6 eggs
1/4 c. sugar
1/4 t. salt (optional)
1 qt. milk
1 t. vanilla extract
1/2 t. cinnamon
1/4 t. nutmeg
1 pt. whipping cream
Recipe
In large saucepan, beat together eggs, sugar and salt (if desired); stir in 2
cups of the milk. Cook over low heat, stirring constantly, until mixture is
thick enough to coat a metal spoon with a thin film and reaches at least 160
degrees F (70 degrees C). Remove pan from heat.
Stir remaining 2 cups milk, cinnamon, nutmeg and vanilla extract into the mixture. Cover and
refrigerate until thoroughly chilled; several hours or overnight. Just before
serving, whip the whipping cream. until medium stiffs are formed. Fold the whipping cream into the egg not and pour the egg nog into a bowl or pitcher. You can also add a touch of flavorings to these, such as orange or lemon extracts.
