Chicken Enchilladas

Chicken Enchiladas
1 cup chopped onion
2 TBS of veg oil
1 t. each of Chili powder, Garlic powder and ground cumin (May add more if you like them spicier)
8 oz of cream cheese...if you need it to be a bit more moist add some sour cream
6 cups of shredded chicken or about 3-4 breasts (cooked)
2 cups of shredded cheddar cheese
3 c. salsa
1 can black olives sliced
10-12 flour enchiladas
1 can enchilada sauce.
1 can chopped green chilies
Heat oven to 350
Cook onion until in oil for about 5 minutes or until translucent. Spread can of enchilada sauce in the bottom of your baking dish 9x13.
In a large bowl add the chicken, the cream cheese, add the spices, mix well. Add olives and a cup of salsa and the chopped green chilies.
Spoon about a half of a cup of chicken mixture on each enchilada shell add some cheddar cheese...(couple of Tablespoons) roll up enchilada. Place seam side down in your dish. Continue until you have used all of your chicken filling.
Top with salsa remaining salsa and cheese. Bake about 35 minutes.
