Peach Delight
Fill the bottom of a 9"x13" pan half full of fresh sliced peaches. Sprinkle with a little lemon juice, and about 1/4c. sugar (If the peaches are really ripe or juicy, add a couple of Tablespoons of instant tapioca, which will help the dessert not get to juicy or runny.I do this for good measure either way as it makes the peaches more like a pie filling consistency)of sugar.
In a mixing bowl beat:
1 1/4 c. sugar
4 1/2 T. margarine
cream until smooth
add:
1 1/2c. flour
1 1/2 t. baking powder
1/2 t. salt
3/4 to 1 c. milk
Beat until you have a batter that you can spread.
Spread over the peaches.
Combine:
1 1/4 c. sugar
1 1/4 T. cornstarch
Sprinkle over the batter.
Pour 1 1/2 c. boiling water over the whole thing.
Bake at 350 for 1 hour. This is so good warm with vanilla ice cream.
My mom Barbara D. has been using this recipe for over 27 years and it is wonderful. This is one of my families favorites.
