Beer Batter Onion Rings
List of Ingredients
2 eggs
2 tablespoons oil
1 1/4 teaspoon salt
small pinch turmeric
1 cup flat beer
2 cups flour
1/4 teaspoon baking powder
1 teaspoon garlic powder
1 or 2 very large Bermuda or Spanish onions (about 4 1/2 inch
diameter)
oil for deep frying

Directions
Whisk together eggs, oil, salt, turmeric, beer, flour and garlic
powder until batter is smooth and thin. Let batter stand covered
at room temperature for at least 4 hours or refrigerate overnight.
(Remove from refrigerator one hour before using).
Slice onions about 1/4 - 1/2 inch thick and separate rings.
Heat oil in deep fryer to 360 F. (Without a thermometer, test oil
by dropping a little batter in oil. It should immediately begin to
sizzle). Dip onion rings, a few at time, in batter. Fry until golden
brown on both sides. Drain on paper towels.
