    Cantaloupe Jam

    List of Ingredients




    2 large cantaloupes, cut into pieces
    Juice of 2 lemons
    Juice and peel of 2 oranges
    1 (16-ounce) can pineapple tidbits, drained
    Sugar
    1 (6-ounce) bottle maraschino cherries, drained and quartered

    Combine first 4 ingredients. Measure fruit mixture and add same amount of sugar. In kettle, cook over low heat for 1½
    hours, or until thick. Add cherries during last 15 minutes of cooking time. To test for doneness, take a tablespoonful
    from kettle and place in the freezer for a few minutes. If jam is thick, it is done. Immediately ladle jam into hot, sterile
    jars. Seal with lids or wax. Makes 4 to 6 pints.
