List of Ingredients
1/2 cup butter or margarine, softened
1/2 cup sugar
2 large eggs, separated
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3 Tablespoons fresh lemon juice
1 tablespoon grated lemon zest
cinnamon sugar
In a mixing bowl, cream the butter and sugar until fluffy. Add the egg yolks and mix well. Combine the flour, baking powder and salt. Add the flour mixture alternately with the lemon juice to the creamed mixture. Beat the egg whites until stiff peaks form; fold into the batter along with the lemon zest. Fill greased or paper lined muffin cups 2/3 full. Sprinkle with cinnamon sugar. Bake at 350 degrees for 20 to 25 minutes or until light golden brown and a toothpick inserted in the center comes out clean. (9 to 12 muffins)Recipe
