Maple Corn Muffins
List of Ingredients
2 cups All Purpose Flour
1 1/2 cup Soya Milk
1 cup Corn Meal
1/4 cup White Sugar
1/4 cup Maple Syrup
1/4 cup Vegetable Oil
1 Egg, Lightly Beaten
3 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
Preheat the oven to 375 F. In a large bowl using a fork combine the flour, sugar, corn meal, baking
powder, baking soda and salt. In a separate bowl whisk together the egg, soya milk and maple syrup. Add
the liquid to the flour mixture and stir well. Add the oil and stir again. Spoon the dough into greased
muffin cups and bake on the centre rack for 20 -25 minutes or until a cake tester inserted into the middle
of the muffin comes out clean.
