Pecan Orange Muffins

List of Ingredients
1 medium-size eating orange, well scrubbed and wiped dry
¾ c pecans
½ c (1 stick) butter at room temperature
1 c plus 1 T sugar
2 large eggs
1 t baking soda
2 c flour
1 c plain yogurt or buttermilk
1/3 c freshly squeezed orange juice
Heat oven to 375
Grease muffins cups or use baking cups
Finely grate the orange peel. (Try to remove as little white as possible.)
Finely chop pecans
Beat butter and the 1 c sugar with an electric mixer until pale and creamy. Beat in eggs, one at a time. Stir in the baking soda and grated peel. Fold in half the flour, then half the yogurt. Repeat, then fold in pecans.
Scoop batter into muffin cups Bake 20 to 25 minutes, or until browned. Remove from oven Brush or spoon orange juice over hot muffins and sprinkle with the l T sugar (we used powdered sugar) Let stand 5 minutes before removing from pans.
Makes 12 regular size or 48 miniature muffins
