    Norwegian Butter Cookies

    1 lb butter

    1-1/2 cups sugar
    2 eggs
    1 teaspoon almond extract
    4 cups flour
    1/3 cup ground almonds
    A pinch salt (approx. 1/8 teaspoon)

    Preparation:
    Stir butter and sugar until creamy
    Add eggs gradually
    Add salt and almond extract
    Mix thoroughly
    Add flour gradually until well blended

    Form into rolls approximately 2" square on wax paper. Wrap the rolls in the paper and chill overnight. Remove paper and cut into 1/4" slices.

    Sprinkle ground almonds on top of the cookies. Make a criss-cross pattern on each cookie by using a regular fork.

    Another method: Roll out the dough on the baking sheet with a rolling pin. Use your cookie cutters to make shapes; remove the excess dough and bake.

    Since this is a large recipe, you can bake halv now and keep the other half well wrapped in the fridge and bake later. Bake cookies at 350°F on ungreased baking sheets for approximately 12 minutes or until light golden in color.

    Cool thoroughly before storing in airtight container.
