    This is a wonderful salad and would be a great meal if served with a roll.

    List of Ingredients




    Dressing

    1 tsp. finely chopped, peeled ginerroot
    I clove garlic pressed
    1/3 c. rice vinegar or white wine vinegar
    1/4 c. orange juice
    1/4 c. vegetable oil
    1 tsp. sesame oil
    1 envelope Lipton Recipe Secrets Onion Soup Mix
    2 tsp. sugar

    Salad

    8 oz uncooked bow tie pasta
    1/2 cucumber scored, seeded and sliced
    1/2 c. diced red bell pepper
    1/2 c. coarsely chopped red onion
    1 package 6 oz fresh baby spinach leaves
    1 can 11 ounce mandarin orange segments, drained
    2 cups diced cooked chicken
    1/2 c. sliced almonds, toasted

    Recipe



    For dressing, finely chopginder root using the food chopper. In small Batter Bowl, whisk gingerroot, garlic press, vinegar, orange juice, vegetable oil, sesame oil, soup mix and sugar. Cover and refrigerate until ready to use.

    For salad, cook pasta according to the package directions in Professional 8 qut stockpot, drain and rinse under cold running water. Place pasta in Simple Additions Large Bowl.

    Meanwhile score cucumber using lemon zester scorer: remove seeds using the corer. Slice cucumber using Ulitimate Slice and Grate. Cut slices in half. Dice bell peppers using chef's knife. Coarsely chop onion using the food chopper. Add cucumber, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.

    Yield 12 servings. Nutriens per serving.... calories 210, total fat 9 grams, Saturated fat 1 g, Cholesterol 20 mg, Cabohydrate 21 grams, Protein 11 grams, Protein 11 grams, Sodium 210 mg, biger 2 grams.
