MOCK CHERRY PIE
(do they make blackberry jello?)

4 c. zucchini, peeled and sliced
2 tbsp. lemon juice
2/3 c. sugar
3/4 tsp. cinnamon
1/4 tsp. salt
4 tbsp. flour
1 tsp. vanilla
1/2 sm. box cherry Jello (mix as
directed on package)

Mix all ingredients together and place in unbaked pie crust. Add top crust. Brush with milk and sprinkle with sugar. Bake, cool and refrigerate. Taste's like cherry pie. Bake at 350 degrees for 1 hour 15 minutes.
