CRAB MELT SANDWICH
Butter
4 sourdough rolls, split
1 pound jumbo lump crabmeat
1 TBSP fresh lime juice
1/3 cup pimento cheese
1 generous TBSP mayonaise
1 tsp. coarse grained mustard
S&P to taste
6 TBSP grated cheese, such as cheddar or Montery Jack
Recipe
**Preheat broiler. Lightly butter rolls and toast under the broiler until lightly browned, about 1 or 2 minutes. Turn oven to 375*
**Gently mix the crab with the lime juice, pimento cheese, mayonaise and mustard. Season to taste with S&P. Mound the mixture on toasted roll halves, top with grated cheese and bake until hot and the cheese melts, about 10 minutes.
**Garnish the plate with mixed greens. 4 servings.
**They go great with gazpacho or chilled avocado soup
