Curried Salmon with Pumpernickle

List of Ingredients
2 tbsp light or regular mayonaisse
1 tsp finely grated lemon peel
1-1/2 tsp lemon juice
1 tsp curry powder, preferably medium-hot
1/2 tsp tobasco
1/2 tsp Worcestershire sauce
Generous pinch of salt
1 - 5oz can of salmon well drained
1 green onion finely chopped
2 large slices of pumpernickel bread
6-7 thin slices of cucumber
1/4 cup alfalfa sprouts (optional)
Recipe
1. In a small bowl, stir mayo with lemon peel, lemon juice, curry, tobasco, worcestershire sauce and salt. In a medium sized bowl, stir salmon with grean onion and two thirds of the mayo mixture.
2. Lightly spread one side of each slice of bread with the remaining mayo mix. Layer one slice with cucumber, salmon mixture and sprouts. Top with other slice of bread.
