Cream of Asaragus Soup
List of Ingredients
1 lb. fresh asparagus
1 1/2 c. chicken stock or canned broth
2 tbls. chopped onion
1 c. milk or cream
salt
freshly ground pepper
Wash stalks and cut off coarse ends. Cook in 2 cups boiling water until tender. Drain, reserving 1 cup of water. Cut off tips, chop and
reserve. Put stock, onion, and reserved cooking water in pan and bring to boil. Add asparagus and simmer 5 min. Puree in processor or
blender. Return to pot and add milk or cream and salt and pepper to taste. Reheat and adjust the seasonings. Before serving, sprinkle with
chopped asparagus tips.
THICK CREAM OF ASPARAGUS SOUP: Before adding milk, melt 2 tbls. butter in large pot, stir in 2 tbls. flour and cook for few min.
until smooth. Slowly add milk or cream and salt and pepper. Then add the asparagus puree and reheat until thickened.
