    1 can of Asparagus Spears or fresh asparagus equal to one can
    2 cups self-rising cornmeal
    1 egg
    Diced onion to taste
    Salt and pepper to taste
    1/4 cup oil or bacon drippings
    If the asparagus is fresh, boil it until very tender, then mash it until it is mixable with the remaining ingredients. If using canned asparagus, drain and mash. Add remaining ingredients; stir well. Heat a large skillet to about 350ºF. Drop by heaping tablespoons into hot skillet, spreading it out just a bit. When the fritters start to rise and slightly bubble in the center, turn them with a spatula. Cook until golden brown on each side. Drain on paper towels. Any vegetable may be substituted for the asparagus.

    (The recipe doesn't call for any oil in the pan, but it sounds like there should be at least a 1/4".)
