Fruit Cocktail Cobbler
List of Ingredients
1/3 Cup Firmly Packed Brown Sugar
3 Tablespoons Cornstarch
2 17 oz Cans Fruit Cocktail, Undrained
1/2 Teaspoon Grated Orange Peel
1 Cup Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/3 Cup Sugar
1/4 Cup Soft Shortening
1 Egg
1/3 Cup Milk
1/2 Cup All Bran Cereal or Bran Buds Cereal
Combine brown Sugar and cornstarch in large saucepan; stir in fruit cocktail
and orange peel. Cook over medium heat until mixture begins to bubble,
stirring constantly. Continue 2 minutes, stirring occasionally. Spread evenly in
ungreased 9x9x2 inch pan. Set aside
Stir together flour, baking powder, salt and sugar. Place in large mixing bowl.
Cut in shortening until mixture resembles coarse cornmeal. Set aside.
In small mixing bowl, beat egg until foamy. Add milk and cereal; stir to
combine. Let stand 1 to 2 minutes or until most of the liquid is absorbed. Add
cereal mixture to flour/shortening mixture, stirring only until combined. Drop
in spoonfuls, spacing 1 for each serving, over fruit cocktail mixture.
Bake in oven 400 F about 25 minutes or until cake topping is lightly brown.
Spoon into dessert dishes and serve warm with whipped topping or half and
