Black Bean Dip
1 can refried black beans (LaPreferida brand)
Salt and pepper to taste
1 small onion; minced
1 jalapeno; minced
1 cup shredded Mexican cheese (Velveeta)
Tortilla chips, sour cream and sliced green onion
Stir together beans, salt, pepper, onion and jalapeno; spread in a shallow oven-proof dish. Top with spicy cheese. Place in a 375° oven for 10 minutes to melt cheese (or microwave). Top with sour cream and sliced green onion; serve with tortilla chips.
If using jalapeno from a jar, also add some of the juice to the beans for added flavor.
That brand of refried bean contains almost no fat and no bad-for-you chemicals.
