A great summer cheese dip that can be served cold.
Golden Garden Dip
1/2 pound Velveeta cheese (reg or Mexican)
1/2 cup dairy sour cream
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped green pepper
2 tablespoons finely chopped onion
2 tablespoons finely chopped pimento
Heat cheese over low heat (microwave at defrost power), stir until sauce is smooth. Add remaining ingredients; mix well. Chill. Serve with assorted vegetable or with tortilla chips.
**Tip: Spice it up; add 2 finely chopped Jalapeno peppers or roast and chop a Pablano pepper.
