Bavarian Pot Roast

Thanks to you all! My goodness my house smells great! I am making a recipe I found years ago called Bavarian Pot Roast.
5lb. bottom round roast
2 c. apple cider
2 tbs. cider vinegar
1 c. water
1- 8oz. can simple tomato sauce
2 good tsp. cinnamon
1 good tsp. gr. ginger
2 lg. bay leaves
Fresh ground bl. pepper
Sea Salt
2 lg. sweet onions sliced into half circles (nearly 1/2 in.)
Good quantity fresh sliced Baby Bella mushrooms or any type you enjoy
Flour and water mixed together for thickening sauce later.
In bottom of heavy pot just large enough to hold meat without swimming, lightly brown onion with 3 to 4 cloves of minced garlic in olive oil. Remove from pan. In same pan sear meat well that has been sprinkled with fresh pepper and salt. Return oinions and garlic, add cider, vinegar, cinn. and ginger, bay leaves and tomato sauce. Add water to level a little higher than half way up meat. Cover snugly and place in preheated 350* oven. We serve with wide egg noodles or new potatoes, broccoli and seeded rye bread.
When meat is done, remove to platter and place pan ontop of stove. Uncover and simmer until reduced and add mushrooms. Thicken to your own preference with water/flour mix. Hope you enjoy. It is a fall meal with the most beautiful bouguet for your nose. I hope someone tries it and loves it. Thanks again for the help.
