Filling
1 lb. dates, chopped
1 C water
½ C brown sugar
1 C walnuts, chopped
Cook dates, water and brown sugar until thick. Remove from heat and cool while making dough. Stir in nuts just before spreading on dough.
Dough
1 C butter
2 C brown sugar
2 eggs
1 tsp vanilla
½ tsp soda
½ tsp cream of tarter
4 C flour
Cream butter and sugar add eggs and vanilla.
Add dry ingredients, combine but don't over mix.
Roll out dough on floured surface into a rectangle approx. 12"x18"(about ¼" thick).
Spread with cooled date filling.
Roll up from long side to form a log about 18" long.
Wrap in plastic wrap and refrigerate at least 2 hours.
Slice about ½" thick.
Place on parchment lined baking sheet.
Bake at 375° for about 10 minutes.
Approx. 3 dz cookies.
