Shortbread with Mixed Nuts

1 stick unsalted butter
1/3 cup plus 1 Tablespoons sugar
1/2 teaspoon vanilla
1 cup flour
3/4 cup roasted SALTED mixed nuts, coarsely chopped
Recipe
Mix butter and 1/3 cup sugar with wooden spoon until well combined. Mix in vanilla. Add flour and mix with hands until dough forms. Press into greased 8x8 inch square pan. Sprinkle top with nuts and gently press nuts in. Sprinkle with remaining sugar.
Bake 20-25 minutes at 375ºF.
