This recipe I originally got from Katie C. It has a nice little "peppery bite", although Ashley likes it made without the peppers. She uses it as a dipping sauce for chicken and egg rolls. A prior poster, Renee, used it as a base for salad dressing. I like it with pork.
PLUM SAUCE
4 lbs. plums
2 cups brown sugar
1 cup white sugar
3/4 cup chopped onion (about 1 medium)
2 tbls mustard seed
2 tbls chopped jalapeno
1 1/4x1 inch piece of fresh ginger, grated
1 tbls salt
1 clove garlic, minced
1 cup cider vinegar
Pit and chop plums. Bring remaining ingredients to a boil, reduce heat and add plums. Cook until thick and syrupy, about 1 1/2 hours.* Ladle hot sauce into hot jars, leaving 1/4 inch headspace. Place lids and rings on jars and process in a hot water bath 20 minutes.
Yield, about 4 pints
