Pear-Vanilla Butter

8 cups pears, peeled and chopped
1 cup water
6 tablespoons fresh lemon juice
2 teaspoons grated orange zest
1/4 teaspoon salt
1 vanilla bean, split
1 cup sugar
In a large, non-reactive pot, add the water, lemon juice, orange zest, salt, and vanilla bean. Bring the mixture to a boil and then simmer uncovered until the pears are very soft. Remove the vanilla bean from the mixture. Scrape seeds into the mixture. Press the pears through a food mill or coarse sieve (I've also just used the stick blender here) and add to the liquid mixture. Add the sugar and return the pot to the stove and cook until the mixture is thick. Ladle into hot, sterilized jars. Seal.
