Pear Praline Pie
Ingredients:
4 C peeled, sliced ripe pears (I use Barletts)
1/3 cup sugar
1/3 cup brn sugar
1/4 cup flour
1/2 teaspoon grated lemon peel
1/2 teaspoon ground ginger ) I also like to use mace instead of the ginger for variety)
Dash salt
1 unbaked (9-inch) pie shell (oatmeal pastry is extra good)
Pecan Praline Topping (see below)
Core and slice pears. Toss pears with sugars, flour, lemon peel, ginger and salt. Sprinkle 1/4 of pecan
topping in pastry-lined pie plate. Add pear mixture. Sprinkle top with remaining pecan topping. Bake at
400 degrees F for 40 minutes. Serve warm or cold. Top with whipped cream or ice cream, if desired.
Pecan Praline Topping
Combine 1/2 cup packed brown sugar, 1/2 cup chopped pecans and 1/3 cup flour. Cut in 1/4 cup butter.
Oatmeal Pastry
1/2 cup flour
1/2 tsp soda
1/2 cup quick oatmeal
1/2 cup brn sugar
1/4 cup shortening
2-3 tabsp water
Blend and use as regular pastry.
Note: I usually combine in my food processor, adding judt enough water to moisten.
Also works to double recipe and crumble half on the top of pie.
