Rich Apple Pie With Oatmeal Cookie Crust

Crust:
1 1/2 cups rolled oats
1/2 cup flour
1/4 teaspoon salt
3/4 teaspoon cinnamon
3 tablespoons brown sugar, packed
1/2 cup unsalted butter, melted
1/2 teaspoon vanilla
Filling:
6 cups peeled sliced apples (about 7 medium apples)
3 tablespoons fresh lemon juice
1 teaspoon fresh lemon zest
1 1/2 teaspoons cinnamon
3 tablespoons flour
1/4 teaspoon allspice
1/4 teaspoon nutmeg
6 tablespoons brown sugar, packed
1/2 cup sour cream
Preheat oven to 375 degrees.
Combine all crust ingredients in a large bowl and mix with a fork until thoroughly blended.. Press firmly into the bottom and sides of a 9 or 10 inch pie pan, reserving about 1/2 cup for the top of the pie. Place the sliced apples in the bowl and drizzle with lemon juice and toss to coat.
Place 3 tablespoons of four in a second, smaller bowl. Add the spices and lemon zest to the flour and use your fingers to crumble in and distribute the brown sugar. Mix until well combined and sprinkle mixture over the apples. Add in the sour cream and mix well. Fill the unbaked crust, sprinkle with reserved crust mixture and pat into place. Bake 45 to 50 minutes or until apples are tender. If crust gets to dark during baking, cover loosely with foil.
