Brown Sugar Chicken w/Sweet Potatoes

3 to 4 pounds chicken pieces
1/4 cup vegetable oil
1/2 cup dry vermouth, or chicken broth
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1 tablespoon brown sugar
2 tart apples, cored, cut in wedges
3 sweet potatoes, cooked and sliced
Brown chicken pieces in a heavy skillet in hot vegetable oil.
Drain off all but 1 tablespoon of the oil.
Combine dry vermouth with salt, pepper, cinnamon, and
brown sugar. Add vermouth mixture to chicken in skillet
along with the apple wedges.
Baste chicken.
Cover skillet and cook over low heat for 25 minutes.
Add the cooked sliced sweet potatoes and baste again with
cooking liquid. Cover and simmer until heated.
Makes 6 servings.
