    Seven Up Salad with Cooked Topping

    List of Ingredients




    Salad:

    2 small boxes lemon Jello
    2 C boiling water
    2 C 7-up
    1 large can crushed pineapple, drained, (save juice)
    1 heaping cup mini marshmallows
    2 sliced bananas
    1 small can mandarin oranges,drained and cut in halves


    Topping:

    2 beaten eggs
    2 C pineapple
    1 C sugar
    1/4 C flour
    2 Tbsp butter
    1 C heavy cream, whipped

    Recipe



    In a large serving bowl, dissolve Jello in boiling water, cool.
    Add 7Up and place in refrigerator.
    When partially set, add pineapple, marshmallows, bananas and Mandarin oranges.
    Chill until firm.

    For the topping:
    In a med sauce pan, stir together the sugar and flour, add eggs and pineapple juice.
    Cook over med heat until thick. Remove from heat and add butter.
    Cool and add whipped cream.

    Spread on top of salad and chill throughly.
