Orange & Fig Dressing Loaves

5-6 Cups Cubed Leftover Bread (I used 2 Cups cornbread & the rest was Italian bread w/crusts removed)
1 Cup Melted Butter (I know, but it was GOOD!)
1 Cup Chopped Celery (I included the leaves)
1 Orange (washed well and UNPEELED, seeds removed)
1 Cup Chopped Dried Figs
2 Eggs, Well Beaten
1 Cup Milk (I had some that needed using...could use stock)
Put the orange and the figs into a FP and process until finely ground. Add the melted butter and celery...pulse just to blend into the orange/fig mixture. Add the eggs and pulse again. Add the milk and pulse enough to combine well. Put the bread cubes into a large work bowl and pour the fruit/egg/milk mixture over the bread cubes. Combine well.
Divide mixture between eight min-loaf pans. Bake at 350 degrees for 30-40 minutes, or firm to the touch. Unmold & serve.
I got the idea from a recipe I got from here last Holiday season. Can't remember who's recipe it is. It was for a quick bread that combined a whole orange and dates. Anyway, the dressing was delicious and looked pretty on the plate. I made the usual chicken gravey and it was surprisingly good with the dressing. Sides were just green beans & steamed whole carrots.
