CHOCOLATE TRUFFLE TORTE
List of Ingredients
- 1 cup sugar
- 1/4 cup shortening
- 2 egg yolks
- 1 tsp vanilla
- 2 sq. (2 oz.) unsweetened chocolate
- 1 1/4 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda and salt
- 3/4 cup milk
- 2 stiffly beaten egg whites
- Truffle Fill:
- 1/2 cup semi-sweet chocolate
- 1 cup whipping cream
- 1/2 cup slivered almonds
- Chocolate Glaze:
- 1 square unsweetened chocolate
- 2 TBS butter
- 1 1/2 cup confectioners sugar
- 1 tsp vanilla
- 2 - 3 TBS boiling water

Instructions
- Cream sugar and shortening; add yolks and vanilla, beat until fluffy.
- Stir in 2 squares unsweetened chocolate, melted and cooled.
- Sift flour, baking powder, baking soda and salt; add to creamed mixture alternately with 3/4 cup milk, beating well after each addition.
- Fold in egg whites.
- Turn into 2 greased and floured 9 x 1 1/2-inch round pans.
- Bake at 350 degrees F for 15 to 18 minutes.
- Truffle Filling: Melt chocolate over low heat, stirring constantly.
- Cool until warm.
- Whip the whipping cream until fluffy.
- Add chocolate, continue beating until stiff.
- Fold in almonds.
- Fill between layers.
- Chocolate Glaze: Melt unsweetened chocolate with butter; stir in sugar and vanilla.
- Gradually add water; beat until smooth, drizzle over cake.
- Sprinkle with almonds.
