    Key Lime Pie-Diabetic


    List of Ingredients


    • 1 cup lowfat graham crackers -- crumbs
    • 3 tablespoons margarine -- melted
    • 4 1/2 teaspoons equal® sweetener -- divided/or Splenda (or 15 packets splenda, divided)
    • 1 envelope unflavored gelatin
    • 1 3/4 cups skim milk -- divided
    • 8 ounces nonfat cream cheese -- softened
    • 1/2 cup lime juice
    • light whipped topping -- to garnish
    • mint sprigs -- to garnish


    Instructions


    1. Combine graham cracker crumbs, margarine, and 1 tsp of equal/Splenda in 7" springform pan; pat evenly on bottom and 1/2" up side of pan.
    2. Sprinkle gelatin over 1/2 cup of the milk in small saucepan; let stand 2 to 3 minutes; heat just to simmering, stirring constantly; cool.
    3. Beat cream cheese until fluffy in medium bowl; beat in remaining 1 1/4 cups milk and the gelatin mixture.
    4. Mix in lime juice and remaining 3 1/2 tsp equal/Splenda.
    5. Pour into pan; refrigerate until set, 3 to 4 hours.
    6. Remove side of pan; place pie on serving plate.
    7. Garnish with light whipped topping and mint.
