Pumpkin Chai Pie
List of Ingredients
- One 15 Oz can pumpkin
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 3/4 cup sugar
- 3 eggs
- 2/3 cup evaporated milk
- 1/2 cup Mountain Chai concentrate (any flavor)
- Single 9" pie crust
Instructions
- Preheat oven to 375 degrees.
- Blend pumpkin, sugar, cinnamon, ginger and nutmeg in a mixing bowl.
- Beat eggs with a fork and add to pumpkin mixture.
- Add evaporated milk and Mountain Chai. Mix well.
- Pour mixture into pie crust.
- Cover edges of pie crust with foil.
- Bake at 375 degrees for 25 minutes.
- Remove foil and bake for 25-35 minutes more, or until a knife inserted off center comes out clean.
- Cool. Top with whipped cream and serve.
- Cover and chill to store.
