    Faux Sweet Potato Casserole-Diabetic


    List of Ingredients


    • 1 can pumpkin puree
    • 1 egg
    • 1 T Splenda
    • 2 T melted butter
    • 1 tsp pumpkin pie spice
    • pinch of salt
    • Topping:
    • 1/4 cup ground pecans
    • 1 T softened butter
    • pinch of cinnamon
    • 1 T Spenda
    • 1 T protein powder (optional)


    Instructions


    1. Preheat oven to 350 F.
    2. Mix first 6 ingredients together and put into a small casserole dish.
    3. Mix topping ingredients and sprinkle over the pumpkin in the casserole dish.
    4. Bake until warmed through and topping has set a bit, about 15 mins.
