Faux Sweet Potato Casserole-Diabetic
List of Ingredients
- 1 can pumpkin puree
- 1 egg
- 1 T Splenda
- 2 T melted butter
- 1 tsp pumpkin pie spice
- pinch of salt
- Topping:
- 1/4 cup ground pecans
- 1 T softened butter
- pinch of cinnamon
- 1 T Spenda
- 1 T protein powder (optional)
Instructions
- Preheat oven to 350 F.
- Mix first 6 ingredients together and put into a small casserole dish.
- Mix topping ingredients and sprinkle over the pumpkin in the casserole dish.
- Bake until warmed through and topping has set a bit, about 15 mins.
