Ginger Lemon Creme Dessert Muffins
Yield: 1 dozen muffins
List of Ingredients
- 2 cups flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3/4 cup granulated sugar
- 1 Tbsp. ground cinnamon
- 1 egg
- 1 cup milk
- 1/4 cup vegetable oil
- 10 Carr's® Ginger Lemon Creme Cookies, chopped into 1/4 inch pieces
- Streusel topping:
- 1 stick butter
- 1 1/2 cups flour
- 1 Tbsp. sugar
- 4 Carr's® Ginger Lemon Creme Cookies, chopped into 1/4 inch pieces
- Garnish:
- 12 scoops vanilla ice cream
- caramel sauce
Instructions
- Preheat oven to 400 degree F.
- Combine flour, baking powder, salt, and sugar in a large mixing bowl. In another bowl, combine egg, milk and vegetable oil.
- Make a well in the middle of the flour mixture, add the egg mixture and combine. Do not over mix. Fold in the chopped cookies.
- Divide batter into greased muffin tin. Top with streusel (for streusel: rub together the butter, flour and sugar until butter is the size of peas, fold in the cookies).
- Bake for 20-25 minutes or until done.
- Cut muffin in half and add a scoop of vanilla ice cream and drizzle top with caramel sauce.
