    Open Faced Tomato Sandwiches


    List of Ingredients


    • 3 or 4 slices of firmly textured brown bread
    • 2 or 3 Roma tomatoes
    • 1/2 tsp. curry powder
    • 1/2 cup Real Mayonnaise
    • a squeeze of key lime
    • 1/4 cube of very soft butter
    • Small amount of softened cream cheese in a pastry
    • Parsley


    Instructions


    1. Cut bread in small round or daisy shapes, about 3 per
      slice of bread.
    2. Wrap in plastic and set aside.
    3. Slice tomatoes thinly, discarding ends.
    4. Stir curry powder into mayonnaise and add the squeeze
      of fresh key or mexican lime juice.
    5. Spread a thin layer of butter on each round and then
      spread with curry-mayonnaise mixture.
    6. Top with one thin slice of tomato.
    7. Before serving, pipe a small rosette of cream cheese in
      the center of tomato and garnish with a small piece of parsley.


    Final Comments


    Makes 9-12 sandwiches.
