    Mock "Twice baked Cauliflower"

    A low carb, version of twice baked potatoes.


    List of Ingredients


    • 2 heads of Cauliflower
    • 8oz cream cheese
    • 8 oz shredded cheddar cheese
    • 1 lb bacon
    • small amount of butter
    • salt and pepper to taste


    Instructions


    1. Separate cauliflower into florettes.
    2. Steam until tender, approx 30 min.
    3. Drain well.
    4. Prepare bacon until crisp.
    5. Combine Cauliflower, butter and cream cheese; mash well.
    6. Place in a casserole dish or a 9 x 13 pan.
    7. Top with Cheese and crumbled bacon.
    8. Place in a preheated 350* oven until cheese is melted.
