Mock "Twice baked Cauliflower"
A low carb, version of twice baked potatoes.
List of Ingredients
- 2 heads of Cauliflower
- 8oz cream cheese
- 8 oz shredded cheddar cheese
- 1 lb bacon
- small amount of butter
- salt and pepper to taste
Instructions
- Separate cauliflower into florettes.
- Steam until tender, approx 30 min.
- Drain well.
- Prepare bacon until crisp.
- Combine Cauliflower, butter and cream cheese; mash well.
- Place in a casserole dish or a 9 x 13 pan.
- Top with Cheese and crumbled bacon.
- Place in a preheated 350* oven until cheese is melted.
