Exotic Mushroom Soup
Recipe Introduction
Yield: 6-8 servings
List of Ingredients
- 1 lb. assorted mushrooms (shitake, portabello, crimini) sliced
- 1 1/2 shallots, sliced
- 1 sprig fresh thyme
- 1/4 cup onion, sliced
- 1 clove garlic, minced
- 3 Tbsp. butter
- 1 1/2 Tbsp. flour
- 1 qt. chicken broth
- 3/4 pint heavy whipping cream
- hot pepper sauce
- salt and black pepper
Instructions
- In a large soup pot saute mushrooms, shallots, thyme, onion and garlic in butter. Saute until the mushrooms are lightly browned (reserve some of the mushrooms for garnishing the finished soup).
- Add the flour and cook for one minute. Add the chicken broth and bring to a boil, simmer for 20-30 minutes.
- Puree soup in a blender until smooth.
- Return to soup pot and add the heavy cream. Bring to a simmer and adjust the seasoning with a dash of hot sauce, salt and pepper.
